Good!
1/2 chopped onion
1 - 2 cloves garlic, minced & crushed
1 tbs. oil
2 cans chicken broth
2 1/2 lbs. asparagus, cut in 1 in. pieces
1/4 tsp. dried tarragon
1/4.c. butter
1/4 . c. flour
1/2 tsp. salt
1/4 tsp. white pepper
3 c. half & half
1 1/2 tsp. lemon juice
Shredded swiss cheese, optional
In large saucepan over med heat, saute onion & garlic in oil
til tender. Add broth, asparagus & tarragon. Simmer til
asparagus is tender, about 8 to 10 min.
In blender, puree asparagus 1/3 at a time. Set aside.
In soup kettle, melt butter, stir in flour, salt & pepper
Cook and stir 2 min. or til golden. Gradually add cream,
Stir in asparagu & lemon juice. Heat thru.
Garnish with cheese if desired.
