1 1/2 c. egg whites ( about 1 doz. )
2 c. packed brown sugar, divided
1 1/4 c. cake flour
1 1/2 tsp. cream of tarter
1 tsp. salt
Beat eggs whites at room temp. Sift 1 c. brown sugar
& flour together twice. Set aside.
Sift remaining sugar, set aside.
Beat egg whites til foamy, add cream of tarter, & salt.
Beat til soft peaks form. Add vanilla, gradually add sugar,
2 tbs. at a time, beating well after each addition.
Beat til glossy peaks form. Gradually fold in flour mixture.
about 1/2 c. at a time.
Gently spoon into ungreased tube pan.
