1/2 c. flour
1/2 tsp. salt
1/3 c. cocoa
4 eggs, separated
1/2 tsp. baking soda
3/4 c. sugar
1 tsp. vanilla
Sift flour, cocoa, soda & salt. Set aside.Beat egg whites til
soft peaks form. Gradually add sugar, continuing to beat
til stiff peaks form.
Beat yolks at high speed til thick and foamy, blend in
vanilla, fold gently into egg whites. fold in dry ingredients
gently but thoroughly.
Put waxed paper into jelly roll pan. Pour batter into pan.
Spread evenly.
Bake at 4oo 10 to 12 min. Loosen edges and turn onto towel
dusted with powdered sugar. Roll up cake with towel from wide
end. Cool completely.
Unroll and fill with your favorite filling. Reroll. Dust with
powdered sugar.
