1/2 c. flour
1/2 c. parmesean cheese
1/2 tsp. dried oregano
salt, pepper to taste
1 1/2 c. shredded zuchinni
1 egg, beaten
2 tbs. chopped onion
2 tbs. mayo.
2 tbs. butter
sour cream - opt.
Combine flour, cheese, oregano, salt and pepper.
Combine zuchinni, egg, onion, mayo. Stir into dry
ingredients. til well blended.
In a large skillet, melt butter. Drop zuchinni by cup-
fuls into skillet. Press lightly to flatten. fry til golden
brown, about 2 min. each side. Drain on paper towels.
