4 med. zuchinni
1 med. onion, peeled & chopped.
1 can chopped green chilies
1 jar - 2oz - diced pimentos, drained
1 1/2 c. herb seasoned stuffing mix ( dry)
3/4 c. mozzarella cheese or monterey jack cheese
1/4 c. butter ( 1/2 stick)
1. Heat 2 in. salted water to boil ,add zuchinni, return to boil.
Reduce heat, simmer til just tender, 8-10 min. drain.Cool
slightly, cut each zuchinni in half, lengthwise..
2. Scoop out pulp, chop coarsley, place zuchinni cut sides
up. in ungresed 13 x9 dish..
3. Cook & stir onions in butter, in skillet til onion is tender.
Stir in chopped pulp, chilies, pimentos & stuffing mix.
Divide stuffing mixture among zuchinni halves.
Sprinkle each with cheese.
Bake uncovered til hot. 30 to 35 min..
