Vanilla Cream Pie

3/4 c. sugar
1/4 c. cornstarch or 1/2 c. flour
3 c. milk
4 eggs
1 tbs. butter
2 tsp. vanilla
1 baked pie shell
Meringue or whipped cream
In a med. saucepan, combine sugar & cornstarch,Gradually
add milk, Cook and stir over med high heat til mixture is
thick and bubbly. Reduce heat and cook 2 min. Remove from heat.
Separate egg yolks from whites. Save white for meringue, Beat
yolks lightly with a fork. Gradually stir about 1 c. of hot filling
into yolks. Return all mixture to saucepan, bring to a simmer.
cook 2 min. longer.
Remove from heat, stir in butter & vanilla. Pour hot filling into
baked pie shell., that has cooled completely.
Top with meringue and bake 350 - 15 to 20 min.
