24 Hour Kansas Coleslaw

1 med/ hd. cabbage, shredded
1 onion, diced fine
red or green bell pepper or both
Sprinkle 3/4 to 1 c. sugar on veggies. Let stand
Dressing:
3/4 c. dark vinegar
1/4 c. water
1 tsp. salt
1 tsp. celery salt
1/2 tsp. black pepper
1/2 c. salad oil
Mix and simmer 30 minutes
Pour over coleslaw while hot. Put in refrigerator
for 24 hours.
Keeps good.
Note:
I add a smidge more vinegar & 1 c. sugar & use a large hd.
of cabbage.
