Creamy Banana Pie

1 envelope unflavored gelatin
1/4 c. cold water
3/4 c. sugar
1/4 c. cornstarch
1/2 tsp. salt
2 3/4 c. milk
4 egg yolks, beaten
2 tbs. butter
1 tbs. vanilla
4 med/. firm bananas
1 c. heavy cream , whipped
1 -10 in. pastry shell baked
juice and zeat of 1 lemon.1/2 c. apple jelly.
1. Soften gelatin in cold water, set aside
2. Combine sugar, cornstarch & salt. Blend in milk and egg yolks.
Cook over low heat stirring constantly til thickened and bubbly.
about 20 to 25 min.( I use a double boiler, it burns easily)
3. Remove from heat, stir in softened gelatin, til dissolved. Stir in
butter and vanilla. Cover the surface with plastic wrap and cool
completely.
4. Slice 3 bananas, fold into custard with whipped cream. Pour into
baked pie shell. Chill til set. 4 to 5 hrs.
5 Shortly before serving, place lemon juice in a small bowl. add
remaining bananas, sliced. Melt jelly, drain bananas. Pat dry, arrange
oon top of pie. Brush bananas with jelly. Sprinkle with zest.
