Fruit Pies Using Tapioca

Apples - 6 c. apples- 2tbs. tapioca- 3/4 to 1 c. sugar - 1/2 tsp. cinnamon- 1/4 tsp. nutmeg
Cherries - 4 c. cherries - 3 tbs. tapioca- 1 1/3 - 1 1/2 c. sugar- 1/4 tsp. almond extract
Peaches - 4 c. peaches- 1/4 c. tapioca - 1 1/3 c. to 1 1/2 c. sugar - 1 tbs. lemon juice
Blueberry - 4 c. bluberries - 1/4 c. tapioca - 1 c. sugar- 1 tbs. lemon juice
Mix fruit, tapioca, sugar, flavorings in bowl. Let stand 15 min.
Pour into pie shell, dot with butter, cover with top crust.
If desired brush on beaten whole egg on top crust. Sprinkle with sugar
