Vegetarian Tamale Pie

2 c. vegeburger
2/3 c. chopped bell peppers, add a few chilies
2 tsp. chili powder
pinch of crumbled oregano leaves
1/4 tsp. garlic powder
1 tsp. salt
1 c. frozen or fresh corn
2 c. canned tomatoes
1/2 c. minced onion
1 1/4 c. yellow corn meal
1 c. cold water
3 1/2 c. boiling water
1 tsp. salt
tomato wedges
Saute vegeburger, bell peppers, tomatoes, onions.
Simmer 15 min.
Meanwhile, combine cornmeal, cold water, & gradually
stir into boiling water. add salt and cook til thickened.
Stirring constantly.
Spread a thin layer over bottom and sides of a 2 qt
baking dish.
Add corn to tomato mixtureand spread over cornmeal
mix.
Spreading remaining corn meal mix on top.
Bake 30 min. 375.
Garnish with tomato wedges
