Zuchinni Egg Bake

3 c. chopped, peeled zuchinni
1 large onion, chopped
2 garlic cloves, minced
1/4 c. butter
4 eggs
1/2 c. grated parmesean cheese
1/4 c. minced fresh parsley
1 1/2 tsp. minced fresh basil
1 1/2 tsp. marjoram
1/2 tsp. salt
1/2 c. shredded monterey jack cheese
In large skillet, saute zuchinni, onion, garlic,
in butter til tender. Set aside.
In a large bowl, whisk eggs, parmesean cheese,
parsley, basil, marjoram, & salt.
Stir in zuchinni mixture, & monterey jack cheese.
Pour into greased 1 qt. baking dish. Bake 350
20 to 25 min. Do knife test-
Let stand 5 min. brfore serving.whwat
