1 med. sized eggplant.
4 tbs. butter
2 tbs. chopped bell pepper
2 tbs. chopped onion
2 c. cooked or canned tomatoes
1 tsp. salt
pepper
3/4 c. bread cubes
Pare the eggplant and cut into small pieces.
Melt 2 tbs. butter in a fry pan.
Brown bell pepper and onion in butter.
Add tomatoes, salt, pepper and eggplant.,
simmer 10 min. Pour into greased baking dish.
Melt rest of butter and mix with bread cubes.
Spread over top of eggplant mixture.
Bake 350 20 min. or til egg plant is tender
and bread cubes are brown.
