Spinach Noodles

1 pkg. - 10 oz - frozen chopped spinach, thawed, & well drained
2 eggs
1 tsp. salt
2 c. flour
In a blender or food processor, combine spinach,
eggs & salt. Process til smooth.
Gradually add flour to make a firm but not sticky
dough.
On a floured board, knead about 20 times, wrap in
plastic wrap and let rest 30 minutes.
Divide dough in half, Roll each half to 1/16 of an
inch. Roll up jelly roll style and slice into 1/4 in slices.
Separate the slices & let rest on a clean towel for at
least 1 hour.
Cook noodles in boiling salted water 10 to 15 min.
Drain.
