1 large head cauliflower, broken into florets
1/4 c. diced bell pepper
1 jar - 7 .3 oz- sliced mushrooms, drained
1/4 c. butter
2 c. milk
1 c. - 4 oz- shredded swiss cheese
2 tbs. diced pimentos or red bell pepper
1 tsp. salt
paprika
In a large saucepan, cook cauliflower in small amount
of water, 6 to 7 min. til crisp tender. Drain well.
In med pan, saute peppers & mushrooms in butter
2 min, stir constantly.
Remove from heat , stir in cheese til melted.
Add pimentos & salt.
Place 1/2 of cauliflower in a greased 2 qt. baking dish.
Top with 1/2 of sauce. Repeat.
Bake uncovered at 325 for 25 min. or til bubbly.
Sprinkle with paprika.
Serves 8 to 10
