2 lb. ground beef
1 med. onion, chopped
1 or 2 garlic cloves, minced
1 can black beans, rinsed and drained
1 to 2 tbs. chili powder, amount your choice.
2 to 3 tsp cumin or less
1/2 tsp. salt
4 flour tortillas, 7 inch
1 can mushroom soup
1 can -10 oz - diced tomatoes with green chilies , undrained
1 c. shredded cheddar cheese
In skillet, cook beef, onion & garlic til meat is no longer pink.drain.
Add beans, spices, salt mix well. Put tortillas in bottom of a greased 9x13 pan.
put meat mixture over tortillas. Combine soups,. tomatoes, pour over meat.
Sprinkle with cheese.
