Prime Rib Of Beef

1/3 c. each, chopped celery, onion & carrots
2 tsp. salt
1/2 tsp. pepper
1/2 tsp. garlic powder
1 beef rib roast - 6 to 8 pounds
1 can beef broth
Combine veggies, place in a greased roasting pan, Combine salt, pepper, garlic, Rub over roast
- Place fat side up over veggies, Bake, uncovered 350 for 2 1/2 hr.- 3 1/2 hours med 160.
Let stand 10 to 15 min. before carving.
Skim fat from drippings, add beef broth, make au jus.
