Vegetable Soup

1/2 c. chopped celery
1/2 onion, chopped
1/2 c. sliced carrots
1 c. diced potatoes
1 tsp. oil
Cook in 2 qts. water 15 min. then add:
1 c. canned tomatoes
1 - 4 tsp. brown sugar ( to taste)
salt to taste
1/2 c. green beans, frozen, canned or fresh
1/2 c. peas, frozen, or fresh
1/2 c. w k. corn, frozen , canned or fresh.
Cook 15 min. more, then add:
2 tbs. chopped parsley
1 tbs. butter
Remove from heat.
This is better 2nd. day. This is good soup. Be careful adding the sugar, its easy to get too much. I've had a lot of compliments with this receipe.
