I triple this for the soldiers and need more sometimes!
1 can tomato soup
1 can mushroom soup
1 can water
oil
For sauce:
Place 1/4 inch oil in 9 x 13 baking dish.
Place in blender soups and water, blend well, pour into the oil in baking dish Set aside.
1 c. ground walnuts or pecans
4 eggs,beaten
1 c. cracker crumbs, I use round crackers like hi ho or off brands ok.
1/2 tsp. salt
3 cloves garlic, minced
1 c. grated cheddar cheese
1 c. grated mozzarella cheese
1 large onion, diced
1/2 tsp. dried sage, fresh is better if you have it.
1/4 tsp. dried basil, a few leaves of fresh better.
to make meatballs.:
thoroughly mix all ingredients in a large bowl, roll into meatballs, place in sauce in baking dish.Should make about 25 meatballs.
If the mixture is a little soupy, add more crumbs and cheese. too dry add another egg. Its a pretty forgiving receipe. I don't know where I found this receipe, but the soldiers, love it. They ask every week if we are having meatballs. We have sent the receipe home with a lot of the soldiers by request.
