2 tbs. dijon mustard
1/3 c. rice wine vinegar
1 c. evoo
1/2 tsp. kosher salt
1/4 tsp. pepper

Recently I was introduced to a book called Superfoods RX by Steven Pratt, M.D. its a book that pinpoints the best foods we could possibly be eating with the reasons why that is. I've listened them here for you. Enjoy my recipes and feel free to change them up with some of the ingredients below to make them not only great tasting, but great for you too! Beans- (pinto, navy, lima, garbanzo (chickpeas), lentils, green beans, snap peas, and green peas) try to eat at least 2 cups a week.
