Cheddar Beef Enchiladas

1 lb. ground beef, cook with onion and garlic
1 envelope taco seasoning
1 c. water
2 c. cooked rice
1 can -16 oz - refried beans
2 c. -8oz - shredded cheddar cheese
10 - 12 corn tortillas
1 - 16 oz. jar salsa
1 can cream of chicken soup
Cook beef, onion and garlic, Drain.and stir in taco seasoning and water.
Bring to boil, simmer uncovered 5 min.Stir in rice and cook and stir til
liquid is evaporated.
Spread about 2 tbs. refried beans & 1/4 c, beef mixture , & 1 tbs. cheese
down center of each tortilla. Roll up and place seam side down in 9x13
baking dishes..
Combine salsa, soup pour down center of each tortilla. Sprinkle with
remaining cheese. Bake 1 casserole uncovered 350 -20 to 25 min. or til heated thru and cheese is melted.
Cover and freeze 2nd. casserole.
