Chicken & Broccoli Stir Fry With Peanuts
1 1/2 c. chicken broth, divided
2 tbs. soy sauce
1 1/2 tbs. cornstarch
1/2 tsp. salt
1/4 tsp. ground ginger
1/4 tsp. garlic powder
nonstick cooking spray1/2 tsp. oil
1 lb. boneless, skinless chicken breasts, cut into 2 in. strips
1 c. small broccoli florets
1 c. red bell pepper strips
1/4 c. chopped unsalted dry roasted peanuts
1. Combine 1 cup, chicken broth with soy sauce, salt, ginger
& garlic powder, in small container. Stir til smooth. Set aside.
2. lightly coat large skillet with cooking spray, heat over high
heat til hot. Add oil, tilt skillet to coat bottom of pan. Add
chicken, stir fry 2 min or til meat no longer pink.
Remove chicken from skillet.
3. Add remaining 1/2 c. broth to skillet. bring to a boil, Add
broccoli and bell pepper, return to a boil, simmer, covered 2
min. or til broccoli is crisp tender.
4. Increase heat to high, add chicken, stir sauce and add to
skillet. Bring to boil, . boil til thickened
Stir in peanuts.
Serve over rice.
