Chicken Stir Fry

1/4 c. orange juice
1 1/2 tbs. cornstarch
1 lb. boneless, skinless chicken breast or use fri chik.
cut in strips.
1/4 c. chicken broth
1 1/2 tbs. soy sauce
2 1/2 tsp. oil
1 clove garlic, minced
1 tbs. minced fresh ginger or 1 1/2 tsp. ground ginger
1 1/2 c. snow peas or green beans
1 med. red bell pepper, cut into thin strips- about 1 cup-
1/4 c. sliced green onion
1 c. frozen broccoli, thawed
1 med. carrot, thinly sliced
2 c. cooked white rice
1. In a shallow glass bowl, combine orange juice &
cornstarch. Mix well, Stir in chicken, cover & chill
for 2 hours.
2. Drain chicken, discard juice mixture. In a small bowl,
combine broth & soy sauce. Set aside.
3. In wok heat oil over med heat, Add garlic & ginger,
stir fry for 30 seconds. Add chicken, stir fry for two
minutes. Add veggies , stir fry til crisp tender.,about
5 min. Stir in broth mixture.
Cook a few min. and serve over rice.
