Fajita Salad

1 small boneless beef sirloin steak, 6 ounces
1/4 c. fresh lime juice
2 tbs. chopped fresh cilantro
1 clove garlic, minced
1 tsp. chili powder
2 red bell peppers
1 med. onion
1 tbs. oil
1 c. garbanzo beans, rinsed & drained
4 c. salad greens
1 med. tomato, cut into wedges
1 c. salsa
1 Cut beef into 2 in. thin strips.
Place in a zip lock bag.
Combine lime juice, cilantro, garlic and chili powder
in small bowl. Pour over beef, seal bag. Let stand 10 min.
2. Cut bell peppers in strips, onions in slices,Heat oil
in wok, over med. high heat til hot. Add bell peppers &
onions, cook and stir 6 min. or til veggies are crisp - tender.
Remove from skillet,Add beef ad marinade to skillet, Cook
and stir 3 min. or til meat is cooked thru.Remove from heat.
Add bell peppers, onion & garbanzo beans to skillet. Toss
to coat with pan juices. cool slightly.
Top slad greens with beef mixture and tomato wedges.
serve with salsa
