Layered Spinach Supreme

1 cup bisquik
1/4 c. milk
2 eggs
1/4 c. finely chopped onion
1 pkg, (10 oz) frozen chopped spinach thawed and drained
1/2 c. grated parmesean cheese
4 ounces monterey jack cheese, cut in about 1/2 in. cubes
1 carton (12 ounces) creamed cottage cheese
1/2 tsp. salt
2 cloves garlic, crushed
2 eggs
Heat oven 375. Grease rectangular baking dish
Mix baking mix, milk,2 eggs and the onion; Beat vigorously, 20 strokes. Spread into dish
Mix remaining ingredients . Spoon evenly over batter in dish.
Bake until set about 30 min. Let stand 5 min. before cutting
