2 med. cucumbers
coarse salt (like kosher)
2 tbs. unsalted butter
1 tbs. chopped fresh mint or dill
freshly ground black pepper
Using a shap pariing knife or veg. peeler,
peel strips lengthwise from cucumber
removing half the skin. Cut cukes in half,
lengthwise & scoop out seeds with a spoon.
Cut each cuke lengthwise again into 4 spears.
then crosswise into 2 in lengths.
Bring a med. saucepan of water to a boil,
& add a generous amount of salt.
Add cucumbers, reduce heat & simmer til
cukes are almost tender, 3 to 5 min.
Remove from heat.
Melt butter in a med. skillet, set over med
heat. Add cukes, herbs, & season with pepper.
Cook, stirring occasionally til cukes are very
hot. about 1 min.
Serve 1 min..
