Spinach Rice

½ c. chopped onions
2 tbs. olive oil
2 c. torn baby spinach
3/4 c. water
1 tbs. dried parsley flakes
1/2 c. uncooked instant rice
1/4 to 1/2 tsp. salt
1/8 tsp. pepper
In a saucepan, saute onion in oil until tender. Add the spinach , water and parsley. Bring to a boil, stir in the rice, salt and pepper. Cover and remove from heat. Let stand for 7-10 min. or til rice is tender and liquid is absorbed.
