about 2 c. stuffing
1 flank steak, about 1 1/2 lb.
2 tbs. fat
Spread stuffing over steak.
Beginning at one side, roll meat like a jelly roll.
Tie securely with string in several places.
Brown the meat on all sides in fat in heavy skillet.
Slip a rack under the meat, cover pan.
Cook in oven at 350 for 1 1/2 hours.
Start carving at end of roll, and cut across the grain,
so that each slice is a round slice with stuffing in
the center.
Make gravy with drippings.
serves 6 to 8
