GRAVY:
5 tsp. soy sauce
2 tsp. corn starch
2 tsp sugar
2 tsp. vinegar
3/4 tsp. salt
1 c. cold water
EGG PATTIES
6 eggs
1 1/2 c. chopped cooked chicken, or fri chik
2/3 c. finely chopped onion
1/4 c. chopped celery
1 -14 oz- can bean sprouts, drained
or use chinese vegetable
oil for frying
TO PREPARE GRAVY
combine soy sauce, cornstarch, sugar, vinegar, salt and water in a saucepan .Bring to a boil and boil for five min. Keep hot.
TO PREPARE PATTIES
combine eggs, chicken, onions, celery, bean sprouts, . Heat oil in large skillet. Dip out 1/4 c. patty mix and pour into hot oil. Use spatula to push cooked egg up over uncooked patty to make a thin patty.When patty
is set, turn and brown. Repeat with remaining mix.
When all patties are fried, serve with gravy.
Serves 4 generously
