Mushroom Scrambled Tofu

Heat in a non- stick skillet or wok
1 tbs. olive oil
Stir in:
1 c. sliced mushrooms
1/2 c. chopped onions, or 1 tbs. onion powder
1 pound soft or regular tofu, crumbled
1 clove garlic, minced or 1/4 tsp. garlic powder
When the tofu starts to brown, stir in:
1 tbs. soy sauce or Braggs Liquid Amino
1 tbs. chopped fresh parsley
Serve with noodles, rice or toast
serves 4
