Vegetarian Tacos

8 taco shells
3 c. shredded cabbage
1 c. sliced onion
1 c. julienned red pepper
2 tbs. oil
2 tsp. sugar
1 can - 15 oz - black beans, rinsed & drained
1 c. salsa
1 can - 4 oz - chopped green chilies
1 tsp. chili powder
1 tsp. minced garlic
1/4 tsp. ground cumin
1/2 c. shredded cheddar cheese
1 med. avacado, peeled & sliced
Heat taco shells per pkg. directions. Meanwhile in
a large skillet, saute cabbage, onion, peppers, in
oil 5 min or til crisp tender.
Sprinkle with sugar. Stir in beans, salsa, chilies,
chili powder, garlic, cumin, Bring to a boil, Reduce
heat cover and simmer 5 min. or til heated thru.
Spoon into taco shells. Garnish with cheese and
avacados.
