3/4 c. flour
1/2 c. cornmeal
1/2 tsp. salt
pepper to taste,
1/3 c. shortening
4 to 5 tbs. cold water
filling:
2 c. chopped plum tomatoes
1 tsp. salt
1/2 tsp. basil
pepper to taste
1/2 c. chopped green onions
1/2 c. shredded cheddar cheese
2 tbs. flour
1 c. evap. milk
2 eggs
In a bowl, combine first 4 ingredients. Cut in shortening.
til crumbly. Add water tossing with a fork til dough forms
a ball. Refrigerate 30 min., make pie crust.
Place tomatoes in crust, sprinkle with salt, basil, pepper,
onions, cheese.
In bowl whisk flour, eggs, milk, til smooth. Pour over
filling.
Bake 375 40 to 45 min. ( do knife test).
Let stand10 min. before serving.
