Broccoli Souffle

2 tbs. minced onion
3 tbs. butter
3 tbs. flour
3/4 c. milk
1/2 tsp. salt
Dash cayenne pepper
1 c. unprocessed cheese, grated
4 eggs, separated... room temp.
1 1/2 lb. broccoli cut up and cooked crisp- tender
Saute onions in butter in large skillet. Add flour &
stir to pasty consistency, slowly add milk, stir til
smooth.
Add salt, cayenne, cheese, Stir til cheese is melted.
Add beaten egg yolks, , cool.
Carefully pour in stiffly besten egg whites.
Pour over broccoli.
Bake 30 min. at 350
