1 - 16 oz - can shoepeg corn, drained
2 - 7 oz- mexican corn, drained
1/2 c. chopped onion
1/4 c. chopped bell pepper
2 tbs. mayo.
1/8 tsp. pepper
8 med. tomatoes
Cut off tops & remove pulp from tomatoes.
Discard tops and pulp.
Mix remaining ingredients. Stuff tomatoes
chill & serve.
I use a little salt, very colorful and good.!
I also use green onions rather than dry or
I sometimes use chives,esp. since I grow
my own.use the seasoning you like.
