Fresh Yams in Orange Sauce

4 lbs. sweet potatoes
2 tbs. cornstarch
2 c.orange juice
1/2 c. pitted dates
2 tbs. butter
1 1/2 tsp. grated orange peel
Cook sweet potatoes til tender
Drain, peel, slice.
Place slices in a casserole dish.
Blenderize orange juice, dates and cornstarch til smooth.
Cook in a small saucepan over med heat.til mixture thickens.
Stirring constantly.
Remove from heat and stir in butter and orange peel.
Pour sauce over sweet potatoes in casserole dish,cover
with foil.
Bake 400 for 45 min.
Remove foil, and continue baking, basting frequently with
sauce, about 15 more min.
Serves 10 to 12.
this can be made a day ahead of time and refrigerated.
until ready to bake.
