Scalloped Basil Tomatoes

16 plum tomatoes
2 c. cubed crustless french bread ( 1/2 in. cubes)
1 tbs. olive oil
1 tbs. sugar
3 cloves garlic, minced
1/2 tsp. salt 1/8 tsp. pepper
1/4 c. thinly sliced fresh basil leaves
3 tbs. shredded parmesean cheese
Peel tomatoes, & cut into 1/2 in. cubes. drain.
In a large non stick skillet, cook bread in oil
over med. heat 5 - 7 min. or til lightly browned
Add tomatoes, sugar, garlic & cook & stir 5
min.
Stir in salt, pepper,basil,pour into a 1 1/2 qt.
baking dish. Sprinkle with cheese.
Bake uncovered at 350 for 35 - 40 min. or
til bubbly.
