Scalloped Cabbage

prep. 15 min - cook 10 min - bake 30 min
1 large cabbage, about 3 lbs. shredded
1 1/4 tsp. salt, divided
2 c. boiling water
2 tbs. butter
2 tbs. flour
1 c. milk
1/2 c. shredded cheddar cheese
3 tbs. saltine crackers, crushed
Cook cabbage and 1 tsp. salt in 2 c. boiling water 8 minutes.
Remove from heat and drain. Place cabbage in a lightly
greased 2 qt. baking dish.
Melt butter in a small sauce pan over med. high heat, whisk
in flour. Slowly whisk in milk til smooth. Remove from heat
and whisk in remaining 1/4 tsp. salt and cheese. , whisking
til cheese is melted. Pour cheese mixture evenly over cabbage.
Sprinkle evenly with crushed crackers.
Bake, uncovered, 350 for 30 min. or til bubbly.
