Apricot Glazed Chicken
1 - 3 lb. chicken, cut into 8 serving pieces
1/4 tsp. salt
1/4 tsp. pepper
In food processor:
Apricot Glaze
1/3 c. apricot preserves
1 tbs. dijon mustard
1/4 tsp. garlic powder
2 tbs. ketchup
2 tsp. finely chopped ginger
process til smooth.
Oven 375 - chicken in roasting pan. Roast 25 to 30 min. then brush with glaze. Roast another 5 min.
