1/2 pound ground beef
1/2 c. chopped onion
1/2 c. chopped green pepper
1 can -15 oz.- black beans, rinsed and drained
1 c. salsa
1 pkg. -81/2 oz- corn bread miffin mix
1/4 c. milk
1 egg
2 c. - 8 oz- shredded chedder cheese, divided
Sour cream & slicd black olives, optional
In a large skillet, cook the beef, onion, and green pepper til meat is no longer pink., drain . Stir in beans and salsa, set aside.
In a bowl, combine the muffin mix, milk , egg and 1 c. cheese, Pour into greased 9 in pie plate.
Bake 375 for 5 - 6 min.
Spoon beef mixture over crust, leaving a 1 in. edge. Bake 15 to 18 min. or til crust is golden brown. Sprinkle with remaining cheese. Bake 1 -2 min. longer or til cheese is melted.
Serve with sour cream and olives if desired.
